The Best Pumpkin Recipes To Enjoy This Fall

Oats and Breakfast Cookies – Oats are great for nursing mamas and keeping kids full.  PLUS, anytime we tell our kids they’re getting cookies for breakfast … we’ve won the day!

Pumpkin French Toast Bake – This is one of my favorite go to recipes because it can last a whole week {if the kids and I don’t eat it all in one sitting… before it cools off}.  Perfect for rushed mornings – just reheat.

Healthy Flourless Pumpkin Muffins – I like to be healthy when I can and this recipe makes it simple to cut gluten and still enjoy pumpkin treats!

Nutella Pumpkin Crepes – And then other times I’m like Nutella forever, because life’s about balance. These crepes are the perfect Autumn Parisian treat.

Pumpkin Scones with Spiced Glaze – Tea and scones aren’t just for afternoons, or for warm tea on a cool crisp morning {what are those?! coming soon we hear!}.  I can’t think of a better way to start our day.

Pumpkin Spice Waffles – I mean pumpkin waffles, maple syrup and maybe even some whipped pumpkin dip to top it off sound amazing.  Perhaps throw in some applewood smoked bacon?  Now you’ve got yourself the most seasonal brunch you can think of.

Pumpkin Recipes Macaroni and Cheese North Phoenix Moms Blog

Pumpkin Stovetop Macaroni and Cheese – I am always on the hunt for modified mac and cheese recipes.  My kids will eat anything if I tell them it’s mac and cheese.

Pumpkin, Basil, Goat Cheese, Fig Tart – This one caught me off guard.  I’m not not sure I would have thought to combine such elegant flavors, but I’m glad I found this, because it sounds incredible.

Pumpkin Hummus – Perfect for sweetening up a traditional snack.

Pumpkin Fritters with Rosemary and Cheese – Rosemary is a great savory herb and its correlation with memory function is just what every mom needs!

Pumpkin Recipes Spaghetti North Phoenix Moms Blog

Pumpkin, Spinach, Walnut Spaghetti – I would have never thought to add pumpkin to spaghetti, but I love butternut squash in pasta, and all those squashes are in the same family right?  Impress your friends with your culinary skills and make this full bodied and robust pasta for any fall get together.

Pumpkin Lasagna – OR this pumpkin pasta dish.  Lasagna is one of my go to recipes because it’s like veggies, cheese, pasta {sometimes some meat} and then repeat!  It’s super easy, and it’s a perfect addition to pumpkin recipes for crisp fall nights.

Roasted Garlic, Pumpkin and Leek Soup – Do I really need to say more?

Chickpea Pumpkin Coconut Curry – I was surprised to find so many diverse recipes with pumpkin.  I can’t wait to make this curry dish.  Well…technically the husband likes to cook dinner … so I can’t wait for him to make this curry dish!

Spicy Squash Soup Recipe – This one is actually acorn squash instead of pumpkin, but I’m allergic to acorn squash, so I substitute pumpkin.

Pumpkin Donuts – Two of my favorite things come together to make the perfect pastry for fall.

Whipped Pumpkin Fruit Dip –  I made this last year after my friend brought it to a pot luck, and you guys my kids ate EVERYTHING with it.  It’s the best.

5 Ingredient Pumpkin Cheesecake Whoopie Pies – These just sound too good to be true.

Coconut Pumpkin Bread – Coconut is one of my favorite baking flavors; it only makes sense to combine it with pumpkin recipes in the fall.

Pumpkin Magic Bars – Magic bars are one of my favorite desserts from my childhood, and I love this autumn twist on a family classic.

Pumpkin Spice Rice Krispy Treats – My kids LOVE making rice krispy treats with me.  They stir and stir until their little arms fall off.  Totally integrating this recipe into our holiday traditions.

No Bake Pumpkin Cookies – You don’t have to twist my arm … I’m beyond thrilled when the oven can stay OFF!

Crockpot Pumpkin Spiced Latte – Save yourself a Starbucks run and make this deliciousness at home!

Pumpkin Hot chocolate -Kids love hot chocolate.  So try this recipe as a sweet treat!

Vegan Pumpkin Spice Bedtime Drink – I’m not a huge fan of milk from cows, so I’m excited to try this vegan pumpkin spice recipe.

Pumpkin Pie Smoothie – I don’t know about you, but smoothies are my go-to meal of choice.  It makes sense to have one of these with an extra scoop of vanilla protein powder.  Now I’ve got a well balanced meal, and it’s technically dessert.

Hope everyone has a great time recreating all these pumpkin recipes! Be sure to post any you try (or any of your go-to pumpkin recipes) on social media and include #nphxmoms.  We LOVE to see what you mamas (and papas) are cooking!
