West Valley Cooking Club: Soup and Salad Night!

Hi there!!

Are you ladies ready for some wonderful winter meals!!! We met last week for a soup and salad night! It was the perfect theme for this wonderful weather! We had the back door open, fresh baked bread (from Safeway) on the table wine in our glasses and the five of us enjoyed a delightful meal. We had smaller group but it was great spending time getting to know one another better!

Along with a Caprese Salad and Golden Beet and Apple salad, we had five tasty soups!

Creamy Cauliflower and Potato Cheese Soup

Three Bean and Kale Soup

Tuscan Soup

Black Bean and Salsa Soup

Delicata Squash Bisque

Tonight I am going to share two… though all were equally delicious!

The lovely Krystle made the yummy Tuscan Soup! You can get the recipe here! My kids loved it, especially the spiral noodles! It is a simple soup that will compliment any entrée or can be made as the main dish… my picky eater loved it!

The next one I want to share with you is the Delicata Squash Bisque! This light puree was topped with candied walnuts! This fancy appetizer was so tasty! My girls would definitely eat this… I didn’t bring any leftovers home because I enjoyed it all by myself but am eager to make it soon!
