The Best Slow Cooker Recipes That Are Perfect For Fall

When the temperatures finally dip below 90 degrees in Phoenix, it is time to dust off that slow cooker! In our household, we have a tradition of slow cooking on Sundays. We try to make it a rule to stay home on Sundays in order to get some quality rest and relaxation.  This gives us an opportunity to decompress and connect as a family before the buzz of the week begins again.

This means putting a slow cooker on low, which also gives us both a break from the grind of cooking dinner during the often precarious witching hour with our little one. We try to eat mostly vegetarian, but often include chicken as our primary source of protein (we stock up at Costco on organic chicken). So light those lovely fall scented candles, grab your favorite pumpkin beer (check out a roundup of the best ones here), turn on some football (or a movie if you can pull the remote from your husband’s hand) and let the slow cookin’ begin.

Buffalo Chicken Lettuce Wraps

This one is by far my favorite and a total hit for hosting football gatherings! Instead of using bread, switch it out for lettuce cups, and before you think it’s too healthy, slather on the ranch and top with blue cheese and shredded carrot.

Corn and Potato Chowder

“Is that the red or the white?”(any Ace Ventura fans?!) There’s only one kind in our house! Try this delicious and easy vegetarian chowder recipe.

Vegetarian Chili 

Classic and simple. Jazz this one up with toppings or make it extra hearty by putting it on top of Fritos for a classic Frito Chili Pie.

Thai Chicken Soup
