I don’t know about you all but breakfast is becoming something of a challenge in my house. My daughter will be perfectly fine eating the same thing every day for a while, and then she will lose interest in it and I will have to find something else. So I hit up Pinterest to try to find something easy that she will eat for breakfast, at least for a while.
And I found blender muffins! I have never tried to mix muffins ingredients in the blender, but it seemed intriguing.. and easy. My girl loves bananas, peanut butter and of course chocolate. So I gave it a shot.
Assemble your ingredients. Fortunately I happened to have all of this on hand which made this even easier for a Sunday morning activity.
Throw it all in the blender and give it a whirl. Incidentally, having a more powerful blender than I do will only help you in this situation. It took a little while for my old girl to mix it all together, but eventually we got there.
Pour (er, spoon) the mix into the muffin tin (I sprayed it with cooking spray first) and add your topping if you choose too. I chose chocolate chips.
Bake at 400 degrees for about 9 minutes.
And serve to your child who has been begging for one ever since the blender gave away that you were making something in the kitchen.
Verdict: Hit! Let’s hope these keep her satisfied at breakfast for a few days anyway 🙂
UPDATE: These muffins were very dense and my girl did, unfortunately, lose interest in them after a few days.. so it’s back to the breakfast drawing board for us. Oh well, it was fun while it lasted and I will try to find a new blender muffin recipe to try!
