Pink Stuff (a holiday side dish)

This is a strange recipe, I know. Its also strange to see in the spread of food for the holidays. But, in our family, it is not a holiday meal without a big plop of “Pink Stuff” on your plate.
This is often referred to as a Jello Salad. I am not sure why! It is my favorite one out there, as I am not a fan of other Jello Salads. This is more of a fluffy, mousse like texture. It is super easy and popular with the kiddos.

 

“Pink Stuff” Jello Salad

1 8oz block cream cheese, softened
1 15 oz can of pears, drained and juice reserved
1 8oz tub Cool Whip
1 large box strawberry Jello

In a blender, combine cream cheese and pears until smooth. Leave in blender, you’ll come back to this in a minute.
Measure 1 cup of the pear juice (adding water to make one cup if needed). Bring liquid to a boil in a sauce pan, then add Jello. Stir until Jello dissolves.
To the blender with the pears and cream cheese, add the Cool Whip and jello. Blend thoroughly. Pour into large bowl and refrigerate until firm.

 

This is my son last Thanksgiving, getting initiated into our family by trying Pink Stuff for the first time. Haha (he liked his very little taste!)
