The Instant Pot is one of the most popular cooking tools used in a kitchen. As a working mom, it has been my saving grace on more occasions than I can count. Not only does it live up to it’s name of being nearly “instant” with how fast a meal is cooked, but the results are worthy of foodie heaven.
I’m a little in love with my own Instant Pot, so I decided to challenge myself and make only Instant Pot dinners for 7 evenings in a row. The results were delicious and actually ADDED time to my busy schedule! Another benefit was every. single. person. ate dinner. With a house full of picky eaters, this was a huge mom win!
Here are the recipes I made using my Instant Pot for one week’s worth of dinners:
Sunday: Pot Roast by Family Favorite Recipes
It only took me 70 minutes of cook time and it was literally the best roast I’ve ever had!
Monday: Chicken Pot Pie Casserole by Adventures of a Nurse
5 minutes of cook time.
Tuesday: Baked Potato Soup by Living Locurto
10 minutes of cook time.
Wednesday: Whole Chicken by Raising Generation Nourished
25 minutes of cook time (15-20 minutes of natural release from pressure).
We made veggies for the side and then made Thursday’s meal with the leftovers.
Thursday: Chicken Noodle Soup by Jo Cooks
7 minutes with pressure on, 6 minutes with lid off.
Friday: Mac and Cheese by Platings and Pairings
4 minutes of cook time.
Saturday: Mexican Shredded Beef Tacos by Your Home Based Mom
35 minutes of cook time.
Instant Pot dinners for a week was NOT hard for me and made my life so much easier. Of course it took me some practice in really mastering some of these recipes, but practice makes perfect!
Some Instant Pot tips I have for you are:
- Don’t be afraid. It may sound like it’s going to explode any second, but it won’t.
- Look at Pinterest – follow @nphxmoms if you aren’t already – for recipes and follow recipe cook times exactly as indicated.
- Get creative!
