YAWN! Who all made it to our Moms Night Out last night?! Well today I’m sooooo craving some tea AND/OR coffee to pick me up…I really want to nap the day away. Alas, the daily deal must go on. So today I am dreaming of Chai Tea Muffins by the one and only Dala of Thyme & Tamarind! Obviously I would pair these with coffee. Enjoy! And as Dala says, “They are light, fluffy, and filled with a creamy surprise!”
Muffin
- 2 cups of flour
- 1 tsp of baking powder
- 1/2 tsp of baking soda
- 1/4 tsp salt
- 1/2 cup of brown sugar
- 1/2 tsp of ground cinnamon
- 1/2 tsp of ground all spice
- 1/2 tsp of ground ginger
- 1/4 tsp of ground cardamom
- 1/4 cup of vegetable oil
- 1 tsp of vanilla extract
- 3/4 cup of chai tea (1/2 cup of chai latte – I used the Tazo brand – mixed with a 1/4 cup of milk)
- 2 eggs
Filling
- 1/2 cup butter, room temperature
- 1-1/4 cups powdered sugar
- 1-2 Tbsp milk
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350F.
- Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, brown sugar, and ground spices.
- In a medium bowl, whisk together vegetable oil, vanilla extract, chai tea and eggs. Pour into dry ingredients and whisk until batter comes together.
- Divide the muffins evenly into the prepared muffin tin.
- Bake for 20 minutes, until a toothpick inserted into the center comes out clean.
- In a mixing bowl, beat the butter until smooth. Slowly add the powdered sugar and then 1 tablespoon of milk at a time until the desired consistency is reached.
- Allow the muffins to cool completely before filling.
- Fill piping bag fitted with a large tip with filling. Insert the tip into the top of each muffin and squeeze about a tablespoon of filling.
