Foodie Friday: Chai Tea Muffins with Vanilla Cream Filling

YAWN! Who all made it to our Moms Night Out last night?! Well today I’m sooooo craving some tea AND/OR coffee to pick me up…I really want to nap the day away. Alas, the daily deal must go on. So today I am dreaming of Chai Tea Muffins by the one and only Dala of Thyme & Tamarind! Obviously I would pair these with coffee. Enjoy! And as Dala says, “They are light, fluffy, and filled with a creamy surprise!”

Muffin
  1. 2 cups of flour
  2. 1 tsp of baking powder
  3. 1/2 tsp of baking soda
  4. 1/4 tsp salt
  5. 1/2 cup of brown sugar
  6. 1/2 tsp of ground cinnamon
  7. 1/2 tsp of ground all spice
  8. 1/2 tsp of ground ginger
  9. 1/4 tsp of ground cardamom
  10. 1/4 cup of vegetable oil
  11. 1 tsp of vanilla extract
  12. 3/4 cup of chai tea (1/2 cup of chai latte – I used the Tazo brand – mixed with a 1/4 cup of milk)
  13. 2 eggs
Filling
  1. 1/2 cup butter, room temperature
  2. 1-1/4 cups powdered sugar
  3. 1-2 Tbsp milk
  4. 1 tsp vanilla extract
Instructions
  1. Preheat oven to 350F.
  2. Line a 12-cup muffin tin with paper liners.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, brown sugar, and ground spices.
  4. In a medium bowl, whisk together vegetable oil, vanilla extract, chai tea and eggs. Pour into dry ingredients and whisk until batter comes together.
  5. Divide the muffins evenly into the prepared muffin tin.
  6. Bake for 20 minutes, until a toothpick inserted into the center comes out clean.
  7. In a mixing bowl, beat the butter until smooth. Slowly add the powdered sugar and then 1 tablespoon of milk at a time until the desired consistency is reached.
  8. Allow the muffins to cool completely before filling.
  9. Fill piping bag fitted with a large tip with filling. Insert the tip into the top of each muffin and squeeze about a tablespoon of filling.
