Happy Spring!!!! I absolutely adore this time of the year! As do my kids. We are slightly obsessed with Easter decorations, daffodils from Trader Joes, and those candy coated chocolate Cadbury Mini Eggs. You know the ones in the purple bag!?? To be honest I actually have a couple sitting by my computer that I am enjoying currently!
I love a good salad that I can entertain with. Whether I am bringing it over to someones house or serving at my home. This is a perfect salad for any spring or summer gathering. And of course the perfect side for Easter Brunch this year. I constantly have people asking me for this recipe. So here it is 🙂
This recipe calls for Creme fraiche. You can buy this at Trader Joes or it is sooooo easy to make. Here is SEE Salt’s recipe for Homemade Créme Fraîche.
- 5 cups frozen peas thawed
- 1/2 cup snow pea pods or Chinese pea pods
- 1/2 cup snap peas
- pea sprouts for garnish
- 1 (8 oz) can of sliced water chestnuts drained
- 1/4 cup red onion chopped
- 1/4 cup mayonnaise
- 1/4 creme fraiche, plain yogurt, or sour cream
- 1/8 teaspoon of white pepper
- 1/8 teaspoon of sea salt
- 1/2 cup of cooked bacon crumbled
- Combine peas and pea pods with the water chestnuts and red onion in one bowl. Set aside.
- Combine mayo, créme fraîche, white pepper and sea salt. Gently fold into pea combination to evenly coat.
- Place in refrigerator to chill.
- Add crisp bacon prior to serving.
- Crown with beautiful pea sprouts and enjoy!
