Easy On-the-Go Breakfast Ideas for School Days

My baby just started preschool (insert tearful emoji here).  He is nearly three and we have been fortune enough to be able to have him home with my husband, me, or an entrusted nanny for all of his life. I know it’s time, but it is pretty trippy to think that our morning routine will be forever changed.  So long are the days of leisurely waking and eating breakfast without any plan at all.  In all honestly, I think one of the things I am most nervous about is getting out of the house on time. My boys tend to sleep in a bit, particularly when we have somewhere to be.  The idea of trying to feed them both and getting out of the house by 8:30 am is already giving me anxiety.    

Planning breakfast that we can take with us in a pinch seems to be the way to go.  I don’t think the new school would appreciate a “hangry” toddler being sent to school.  Being that school has started, I thought I would save you some time, and do some Pinterest recipe testing for some easy on-the-go  breakfast ideas.  

#1 Green Smoothie Pancake (Muffin) 

First off, we are huge fans of the Kodiak Power Cake mix.  Any time I can get some added protein into my kids’ diets, it’s a win.  Adapted from a pancake recipe, I wasn’t convinced that this one would pan out- pun intended. Although it looks the least appetizing, these were actually really tasty and both my boys ate them up! I also love that they are getting some spinach in too, without noticing.   I added the blueberries on top, mostly to make them pretty, but they ended up adding a little extra sweetness too!  

#2 Baby Food Muffins 

I mostly made these for my 9 month old, but my older kiddo loved them too!  With yummy ingredients like oats, whole wheat flower, avocado, and apple sauce, these have all the things us mamas want our kiddos to have, and the kiddos think they’re getting a treat! These were also super easy to make. I think next time I’ll try adding grated apple and carrots. 

#3 Broccoli Cheddar Egg Cups 

These are so good for the whole fam and the ingredients can easily be changed to suit what your family likes. I love that I can control the quality of the ingredients, and they are super easy as a grab and go easy breakfast or snack.  We just toss them in the toaster over to warm through and are set!

#4 – Blueberry-Chia Seed Jam 

This is a little bonus recipe. In all honestly, I had a Costco sized carton of blueberries that I needed to use up. This jam was really easy to make!  It also pairs well with the muffins or on toast, which I have served with the egg cups. Again, I love that I can control the quality of the ingredients and the amount of sugar in the jam. Not to mention the added health benefits of the chia seeds.  I’ll definitely be making this again.

Overall, I was really pleased with how everything turned out.  These easy breakfast ideas definitely eliminate some of the anxiety on school mornings.
