Chickpea and Black Bean Salad – Thyme and Tamarind Recipe

It’s foodie Friday! Today I’m featuring a recipe from my dear friend Dala over at Thyme and Tamarind. Keep your eye on this food blogger because she will probably be seen around here now and again and she is doing big things in the next year over at her corner of the internet. So today we are sharing her YUMMY Chickpea and Black Bean Salad. So fresh and easy just in time for summer. As a full time working momma anything that is a quick fix goes over extremely well with me and my family! I hope you enjoy this amazing salad! What are your summer staple recipes?

Salad Ingredients
  • 1 15oz can of garbanzo beans
  • 1 15oz can of black beans
  • 1/2 cup of chopped red onions
  • 1 clove of garlic, chopped
  • 2tbs of chopped mint
  • 1/2 cup of chopped parsley
Dressing Ingredients
  • 5 tbs of olive oil
  • 1 lemon juiced (about 3 tbs)
  • 2tbs apple cider vinegar
  • salt and pepper to taste
Instructions
  • Drain and rinse the garbanzo and black beans. Pour into a bowl.
  • Add remaining salad ingredients to the beans and mix well.
  • Mix the dressing ingredients in a separate bowl and then pour over salad. Mix well to incorporate. Add more lemon or olive oil to taste.
